As a winegrower, cooperative or recognized producer group that accepts grapes or mash, you are obliged to report your grape harvest and wine production.
Grapes, grape must, Federweißer and wine may only be sold to others in quantities corresponding to the total yield per hectare of the wine-growing business.
The area under vines used to determine the total yield per hectare of a business is the area under vines. The maximum permissible yield per hectare is 90 hl per hectare for the specified growing region of Franconia and 110 hl per hectare for the Bavarian part of the specified growing region of Württemberg (Bayerischer Bodensee).
The maximum permitted yield per hectare represents the maximum annual marketing quantity of wine that may be placed on the market by the winery.
The harvest quantity exceeding the total yield per hectare of a wine-growing operation is referred to as surplus quantity.
A distinction is made here:
Excess quantities that exceed the total yield per hectare by more than 20% may only be used for winemaking on the winery's own premises and must be distilled by December 15 of the year following the harvest (see information page "Distillation obligation").
If the harvest quantity on a wine-growing operation does not exceed the total yield per hectare by more than 20%, this excess quantity may only be used on the operation itself for wine production and stored beyond the harvest year, used on the operation itself for the production of quality sparkling wine psr and stored beyond the harvest year. The marketing of these two products is possible without deduction from the permitted marketing quantity.

Members of producer groups or cooperatives who deliver their entire harvest are exempt from the obligation to register.
